Here is a nice change from the ordinary, an oatmeal blueberry pancake recipe. Mix 1 cup all-purpose flour with 1 cup rolled oats2 teaspoons baking powder, 1/4 teaspoon salt, and 1 tablespoon sugar (optional) in a blow, I use my Oxo good grips stainless steel bowl.
Separately beat 2 eggs into 1 1/2 cup milk, and 2 tablespoons melted butter (optional). Stir with dry mixture. I add the blueberries once I have poured the batter into the skillet. Flip when bubbles rise to the surface of the pancake and the bottom is nicely browned.
